Roasted Carrots with Beets & Feta
Ingredients
- 2 large carrots
- 2 medium beets
- 2 tbsp olive oil
- 2 small sprigs fresh rosemary
- to taste mineral salt
- 1/2 cup feta
Instructions
- Preheat the oven to 200C and line a baking tray with parchment paper
- Peel and slice carrots and beets and spread evenly on the tray
- Drizzle with olive oil, salt and fresh rosemary
- Roast for about 40-45 minutes until vegetables are tender and starting to brown, tossing halfway through
- Serve with feta and extra rosemary to garnish if desired
