Warming, comforting and full of flavour, this Creamy Carrot and Ginger Soup is the perfect autumnal recipe. Made with my secret ingredient (keep reading to find out!) this soup is extra thick and hearty. Nourishing and easy to digest, it’s an ideal addition to your postpartum meal prep.
Add an Ayurvedic Twist
This recipe adds a little Ayurvedic twist to the classic carrot and ginger soup. With Ayurvedic spices and a splash of lime juice, this soup is sooooooo tasty! Despite its creamy consistency, it’s not actually made with cream! Coconut milk is used instead making this recipe suitable for vegans.
My Secret Ingredient
Now, my secret ingredient which I add to (almost) every soup…. Split red lentils. By no means a fancy ingredient (in fact they are very very budget friendly), split red lentils transform soup! I personally find soups too light and I’m often still hungry after. The lentils add bulk to the soup and a lovely rich texture so you’re left feeling pleasantly full after eating! Enjoy this carrot and ginger soup by itself, or serve a smaller portion alongside your favourite sandwich.

You can prepare a batch ahead of time and freeze, or send it to a family member and ask them to make it for you (it’s very easy!).

Ayurvedic Perspective on Creamy Carrot and Ginger Soup
Soups, like this one, are STRONGLY encouraged in the Ayurvedic diet. Firstly, all the ingredients in soup are well cooked and blended. This, along with the combination of Ayurvedic herbs and spiced, makes soups very easy to digest. The addition of lentils in this recipe adds protein which is often missing from most soup recipes, making it more of a complete meal. Carrots and ginger are particularly Vata pacifying for fall season, however this recipe balances all three doshas and can be enjoyed by all!

Creamy Carrot & Ginger Soup
Ingredients
- 5-6 carrots (peeled & chopped)
- 1 1/2 cups split red lentils
- 3 cups boiling water
- 3 cloves garlic (peeled & chopped)
- 2 brown onions (diced)
- 1 inch fresh ginger
- 1 tbsp coconut oil (or ghee)
- 1/2 tsp cumin
- 1/2 tsp turmeric
- 1 cup veggie stock
- 1/2 tin coconut milk
- 1 juiced lime
- Handful cilantro leaves
Instructions
- In a large pot, sautรฉ chopped onion, garlic and fresh ginger in coconut oil for 5 minutes
- Add the chopped carrots and continue to cook with the lid on the pot for 10 minutes or until the carrots start to soften
- Then, add the split red lentils, cumin, turmeric and stock cube and stir until combined
- Pour in boiling water and leave to cook for a further 10-15 minutes, or until the lentils are completely broken down
- Add coconut milk and lime juice, and blend with a stick blender until smooth
- Serve with handful of cilantro on top and a piece of crusty sourdough bread on the side!
Notes
- I prefer thick soups but if you prefer a thinner consistency, use the full tin of coconut milk and/or add a little extra stock!
