Looking for a healthy brunch with a tasty twist? Try this Miso Mushroom Toast! So much flavour and so easy to make.
You might be familiar with miso from the much loved soup that accompanies your sushi order. But did you know that miso can be used in so many ways outside of Japanese cooking? Just 1 tsp of this paste can add so much flavour to a savoury meal.
Miso Mushroom Toast is perfect for a weekend treat that’s still healthy. Miso is packed with essential minerals and even contains probiotics, helping foster a healthy balance of good gut bacteria and support strong digestion.
I looooooove having this with a sunny side up egg on top to make it a complete meal! This portion is great for a snack or a light breakfast – double the quantities of everything for a more substantial meal!
The Taste of Miso
You might be a little skeptical about putting miso in your breakfast – I get it! I was too at first. If you are new to cooking with miso or are not sure about it, you can try 1/2 tsp to start instead! You’ll soon see what a great taste it gives!
The tongue has different receptors that can detect five tastes (sweet, sour, salty, bitter and umami). Ayurveda has a slightly different framework and recognises six tastes (sweet, sour, salty, pungent, bitter and astringent).
Miso embodies the “umami” taste (with a little saltiness too!). Umami means “essence of deliciousness” in Japanese. It’s a savory flavour used mostly in cooking broths and meats, but I find it works great with so many veggie meals (including this One Pot Creamy Spinach & Mushroom Orzo).
Ayurveda Perspective on Miso Mushroom Toast
In Ayurveda, fermented foods like miso are recommended (in small amounts) to support a healthy microbiome. Basically – a little goes a long way! This Miso Mushroom Toast is a perfect brunch option for Vata types. Fermented foods are heating so Pittas should eat in moderation.

- Mushrooms
- Miso paste
- Sourdough (or any bread)
- Rocket
- Garlic
- Olive oil
- Chilli flakes (optional)

Miso Mushroom Toast
Ingredients
- 1/2 tbsp olive oil
- 1 clove garlic (minced)
- 1 tsp miso paste
- 1 pinch chilli flakes
- 100 g mushrooms (I used chestnut)
- 1 slice toast (I used sourdough loaf)
- 1 handful rocket salad leaves
- 1 pinch black pepper
Instructions
- Sautee minced garlic in olive oil for 2-3 minute
- Add miso paste, chilli flakes and sliced mushrooms and cook for about 10 minutes until mushrooms soft
- Meanwhile, make toast and lay rocket leaves on top
- When mushrooms are ready, layer on top of the toast and rocket and serve with black pepper
Notes
- This portion is great for a snack or a light breakfast - double the quantities of everything for a more substantial meal!
- You wont want to add any extra salt to this recipe due to the miso
- If you are new to cooking with miso or are not sure about it, use 1/2 tsp instead
- This recipe is sooooooo good with a sunny side up egg on top!
