When I say this recipe couldn’t be easier to make, I mean it. Simply mix the ingredients together, bake and serve. That’s it!

Baked oatmeal recipes are an amazing option during busy weeks, or postpartum, when you want to prep ahead.

Delicious and still so simple to make when the busy morning is in full swing. I made mine in a loaf tin so just added 10 mins to the cook time and it was perfect! I think it would be really yummy with coconut yoghurt too. Thankyou Rebecca! Sooo yum x

A Delicious Way to Add Some Sweetness to Your Day

Who doesn’t want to start their day with a breakfast that tastes like cake? 😂

This carrot cake baked oats recipe is naturally sweetened with maple syrup – just the right amount to add a little sweetness to your day, but not overly sweet at all (I’m not a fan of that in the morning!).

Forget the cream cheese frosting and use a little greek yoghurt to add a creamy topping (and some protein!) to this breakfast.

Fiber Rich & Just the Right Spice

The combination of oats, carrots and raisins makes this breakfast a great source of fiber.

Cinnamon gives a cozy taste and also helps support your digestive fire (agni) to breakdown ‘heavier’ foods like oats.

You can add other warm spices like nutmeg, ginger, cardamom (or even a dash of vanilla) to give this extra flavor.

These baked oats also have the BEST texture and stay together perfectly when you slice and serve.

Simple swaps – This recipe is so easy to make your own! Change up the spices, chose your milk, add some pecans or walnuts, or your other favorite toppings.

Here’s What You Need

  • Coconut oil (or butter)
  • Rolled oats (gluten free if desired)
  • Baking powder
  • Cinnamon
  • Raisins
  • Grated carrot
  • Maple syrup
  • Eggs
  • Milk of choice (almond milk, whole milk, oat milk etc)
  • Greek yogurt & hemps seeds (optional for topping)

How to Make Carrot Cake Baked Oats – Step by Step

  1. Preheat oven to 350F/180C and grease an 8×8 baking dish with a little coconut oil or butter (so the baked oats don’t stick)
  2. Combine all the wet ingredients and dry ingredients before adding the mixture the tin and bake for 30 minutes or until turning golden brown
  3. Top with greek yoghurt, hemp seeds or even some walnuts and enjoy!

That’s it! This is truly such an easy recipe – only two minutes to prepare, pop it in the oven and you’re done! Your kids will love getting involved in the measuring and mixing!

Ayurvedic Perspective on Carrot Cake Baked Oats

Of course, this isn’t a typical Ayurvedic meal! But from an Ayurvedic perspective, this recipe is packed with comforting, grounding & nourishing ingredients that provide a hearty and warm start to the day, particularly for Vata types during cooler months.

In Ayurveda, oats and yoghurt are considered an ‘incompatible food combination’ – this means it can be hard to digestion. If you are struggling with gas, bloating or sluggish digestion, skip the yoghurt topping and just enjoy the baked oats.

PS – Don’t use honey in this recipe – Ayurveda recommends never cooking with honey so stick to maple syrup!

Ingredients
 

  • 1 tsp coconut oil ((or butter))
  • 2 cups oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 cup raisins
  • 1/2 cup grated carrot
  • 1/4 cup maple syrup
  • 1 egg
  • 2 cups milk of choice
  • greek yogurt & hempseeds ((optional for topping))

Instructions
