Here’s What You Need

  • Smooth nut butter
  • Eggs
  • Maple syrup
  • Coconut oil
  • Cacao powder (or unsweetened cocoa powder/dutch processed cocoa powder)
  • Coconut sugar (or brown sugar)
  • Baking powder (not soda)
  • Cinnamon
  • Sea salt
  • Milk chocolate chips

How to Make The Best Brownies – Step by Step

Step 1: Preheat oven to 350F / 180C and line an 8×8 baking tin with parchment paper..

Step 2: Combine all the dry ingredients and wet ingredients to make a thick batter (full instructions below), excluding the chocolate chips until the very end. It may be too thick to whisk, so a wooden spoon is better!

Step 3: Pour the mixture into the tin, spread evenly and bake in the preheated oven for about 15 minutes.

Step 4: Leave to cool for a further 15 minutes in the tin before sprinkling with sea salt, slicing and serving.

What Nut Butter to Use?

I used peanut butter in this recipe but you can use any nut butter of your choice. Just opt for a smooth, natural version. My absolute favourite is this Almond Hazelnut Butter blend.

Want a little extra crunch? Add a few tablespoons of crushed walnuts to the batter before baking! You can also experiment by adding a teaspoon vanilla to complement the chocolate flavor. 

Extra Baking Tips

The batter is supposed to be quite thick, so make sure to spread it throughout the baking tin with a rubber spatula so it cooks evenly.

The key with these brownies is to not overcook them! When you take them out of the oven, they should be a little underdone as they will continue to cook when they sit in the tray. The last thing you want it dry brownies.

Be patient – make sure you allow them to cool fully at room temperature when placed on a rack. Don’t try to cut them right away as tempting as it might be, as they can lose their shape!

Serving and Storing

The portions for these Fudgy Flourless Brownies are quite small as they are rich. Feel free to cut them a bit bigger if you prefer.

The small portions also make them a nice treat for kids, particularly for any that have issues consuming wheat and can’t enjoy regular brownies!

Store them in a glass container for 1-2 days or about 3 days in the fridge or longer if stored appropriately in the freezer.

Ayurveda Perspective on Fudgy Flourless Brownies

Dense, oily and heavy, these brownies are a grounding treat for Vata types. The sweet and salty tastes are also comforting when you’re feeling stressed or frazzled. 

Too many of these brownies won’t be good for Kaphas as they are quite rich, but adding some chilli flakes and having them with a cup of fresh ginger tea can help lighten the load on digestion.

Pitta types should avoid peanut butter and opt for either almond or cashew butter instead.

Fudgy Flourless Brownies

Rich and gooey, these Fudgy Flourless Brownies are the perfect weekend treat. These bite-sized brownies are so soft you won’t believe there is no flour in this recipe!

Ingredients
 

  • 1 cup smooth, natural nut butter ((your choice of almond, peanut, cashew))
  • 2 medium eggs
  • 1/4 cup maple syrup
  • 1 tbsp coconut oil ((melted))
  • 1/3 cup raw cacao powder
  • 1/3 cup coconut sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 pinch sea salt
  • 1/2 cup chocolate chips

Instructions
 

  • Preheat oven to 180 and line a baking tin
  • Add all ingredients (except for chocolate chips) to a large mixing bowl and stir thoroughly until fully combined (the batter will be quite thick)
  • Then stir in the chocolate chips
  • Pour batter into baking tin and spread evenly
  • Cook for about 15 minutes and leave it to cool in the baking tin for a further 15 minutes
  • Then, remove from tin and place on a cooling rack for another 15-20 minutes so it is fully cool before cutting
  • Serve with an extra sprinkle of sea salt if desired!

Notes

  • I made this with peanut butter but you can use a nut butter of your choice! Just make sure it is a smooth, natural version
  • The batter is supposed to be quite thick, so make sure to spread it evenly in the baking tin so it cooks evenly
  • These are supposed to be slightly undercooked as it will continue to cook while it rests in the tray
  • Be patient – don’t try to cut it right away as tempting as it might be!
