Roasted Carrots with Beets & Feta

Ingredients
  

  • 2 large carrots
  • 2 medium beets
  • 2 tbsp olive oil
  • 2 small sprigs fresh rosemary
  • to taste mineral salt
  • 1/2 cup feta

Instructions
 

  • Preheat the oven to 200C and line a baking tray with parchment paper
  • Peel and slice carrots and beets and spread evenly on the tray
  • Drizzle with olive oil, salt and fresh rosemary
  • Roast for about 40-45 minutes until vegetables are tender and starting to brown, tossing halfway through
  • Serve with feta and extra rosemary to garnish if desired
