The excitement of summer doesn’t quite hit the same as a parent 😂 Of course this time of year brings so much joy, but also with it comes exhaustion from end of school, pressure to keep kids entertained and juggle work, all while trying hard to ‘make memories’ when all you really want to do is relax 🤪
I’ve decided to put together some super quick, simple recipes that you can ‘grab and go’ this summer while staying cool and refreshed!
First up is my all time favourite Ayurvedic Summer Salad! So full of flavour, perfect to make in batches and can also be served up along side your summer BBQ or picnic menu. Enjoy with a sparkling glass of Pomegranate Lime Spritzer 🥂 Hangovers and little kids just don’t mix – so whisk yourself up a refreshing glass of this non-alcoholic alternative and I promise you’ll thank yourself in the morning!
Summer is all about staying hydrated, so smoothies are a quick and easy way – both for you and the kids – to get a quick snack and some extra liquids in on extra hot days! For a fresh berry burst, try either my Acai & Berry Smoothie or The Perfect Blueberry Smoothie (Pitta Friendly). This Golden Glow Mango Lassi is also sooooo delicious and will help give your skin that summer glow!
When it comes to keeping the kids happy, who doesn’t love chocolate milk? When you have a chance, try this healthier Ayurvedic Chocolate Milk with Hazelnuts (tastes just like Nutella!) and see how much they love it. You can also use this recipe to make homemade chocolate fudge popsicles! Just blend about 1 1/2 cups of the chocolate milk with about 1/2 cup of a chocolate nut butter spread (or any nut butter!) and freeze in moulds.
