At 31 weeks pregnant, it’s starting to hit me that there’s not much time left for just me and my daughter to spend time together before baby arrives. I’ve been trying to do some low key, toddler friendly activities for us to have some quality time – when my energy allows!
I wanted us to make Halloween cupcakes this weekend, but being honest that just seemed like too much effort. Making cupcakes AND icing? Too much for my brain to handle right now!
So instead, I decided to make these healthier monster cookies. I figured they could double up as a Halloween treat and I could tuck some away in a postpartum freezer stash (edit – we ate them all 😂 so none left for a freezer stash oops 😬). They were so easy to make and can be done in just one bowl so little to no mess – perfect for getting kids involved!
Here’s What You Need
- Almond butter
- Eggs
- Ghee
- Oats
- Coconut sugar
- Baking soda
- Dark chocolate
- M&Ms

Monster Cookies (Healthier Recipe)
Ingredients
- 1/2 cup almond butter
- 1 medium egg
- 1 tbsp ghee (or butter/coconut oil)
- 1/3 cup coconut sugar
- 1/2 cup oats
- 1/4 tsp baking soda
- 1/4 cup dark chocolate chips
- 1/4 cup m&ms (or smarties)
Instructions
- Preheat the oven to 180 C and line a baking tray with parchment paper
- In a large mixing bowl, combine the nut butter, egg and melted ghee/coconut oil until smooth
- Then add in the remaining ingredients (except the m&ms) and stir well to form a sticky dough
- Using either a tablespoon or cookie scoop, make 10 balls and spread evenly on the baking tray (making sure to leave room for them to expand)
- Gently press the m&ms on top of each cookie before placing in the oven, and then bake for about 12-13 minutes
- When baked, transfer to a wire rack and cool before eating!
