Monster Cookies (Healthier Recipe)

Ingredients
 

  • 1/2 cup almond butter
  • 1 medium egg
  • 1 tbsp ghee ((or butter/coconut oil))
  • 1/3 cup coconut sugar
  • 1/2 cup oats
  • 1/4 tsp baking soda
  • 1/4 cup dark chocolate chips
  • 1/4 cup m&ms ((or smarties))

Instructions
 

  • Preheat the oven to 180 C and line a baking tray with parchment paper
  • In a large mixing bowl, combine the nut butter, egg and melted ghee/coconut oil until smooth
  • Then add in the remaining ingredients (except the m&ms) and stir well to form a sticky dough
  • Using either a tablespoon or cookie scoop, make 10 balls and spread evenly on the baking tray (making sure to leave room for them to expand)
  • Gently press the m&ms on top of each cookie before placing in the oven, and then bake for about 12-13 minutes
  • When baked, transfer to a wire rack and cool before eating!
