Calling all pancake lovers! These fluffy vegan pancakes are my favourite. They taste and feel like the rich American style pancakes you know and love, but are made without the eggs, milk and butter. These pancakes will be a hit with the whole family! This recipe is so good, my husband didn’t believe me when I told him what was in the pancake mix. He also loved them so much he made us a second batch the following day!
I personally like to keep my pancakes quite simple. I prefer to use a plain batter and just add a little maple syrup on top, and in this case a few banana slices too. However, you can feel free to use this recipe as a base to experiment. Add some blueberries to the mix, serve with pecans or even pour a little chocolate sauce on top!
This recipe calls for a little oat flour. If you don’t have any, you can very easily make some yourself at home. All you need to do is quickly blitz the oats in a blender. However, if you don’t have a blender or want to skip this step, you can simply add the rolled oats to the batter. I’ve tried it both ways and it tastes just as good! You can also make the batter the day before and leave it in the fridge overnight. That way, it’s ready and waiting for you first thing in the morning which is a nice bonus too!
I am a big pancake fan and love to have them as a homemade treat for brunch every now and then. They are usually my birthday breakfast request too! I often experiment with different flours like oat, spelt or buckwheat flour but these fluffy vegan pancakes are my favourite for special occasions.

Fluffy Vegan Pancakes
Ingredients
- 1 1/4 cup plain flour
- 1/4 cup oat flour (blended oats)
- 1 1/2 cup almond milk
- 1 tbsp maple syrup (plus more to taste for topping)
- 2 tsp baking powder
- 2-4 tsp coconut oil (for frying pancakes)
Instructions
- Add all ingredients (except coconut oil) to a large mixing bowl and whisk until a smooth batter
- Heat pan and melt a little coconut oil before pouring batter to your pancake size of choice
- Repeat until all the batter is gone and serve pancakes with your favourite toppings
Notes
- This recipe makes two large servings of the fluffy vegan pancakes
- I made four medium sized pancakes, or you can make 6-8 smaller ones if you prefer
- I use maple syrup, pecans or banana as a topping, you can use any of your favourites!
- You can easily make your own oat flour by blending rolled oats, but you can also just add the oats to the recipe and it works great!
