Fluffy Vegan Pancakes

Calling all pancake lovers! These fluffy vegan pancakes are my favourite. They taste and feel like the rich American style pancakes you know and love, but are made without the eggs, milk and butter. These pancakes will be a hit with the whole family!

Ingredients
 

  • 1 1/4 cup plain flour
  • 1/4 cup oat flour ((blended oats))
  • 1 1/2 cup almond milk
  • 1 tbsp maple syrup ((plus more to taste for topping))
  • 2 tsp baking powder
  • 2-4 tsp coconut oil ((for frying pancakes))

Instructions
 

  • Add all ingredients (except coconut oil) to a large mixing bowl and whisk until a smooth batter
  • Heat pan and melt a little coconut oil before pouring batter to your pancake size of choice
  • Repeat until all the batter is gone and serve pancakes with your favourite toppings

Notes

  • This recipe makes two large servings of the fluffy vegan pancakes
  • I made four medium sized pancakes, or you can make 6-8 smaller ones if you prefer
  • I use maple syrup, pecans or banana as a topping, you can use any of your favourites!
  • You can easily make your own oat flour by blending rolled oats, but you can also just add the oats to the recipe and it works great!
